Lemon Blueberry Zucchini Cake with Lemon Cream Cheese Frosting

I got recipe from Real Mom's Kitchen....I took it to a party and it was a big hit!

Lemon Blueberry Zucchini Cake with Lemon Cream Cheese Frosting

3 cups peeled and shredded zucchini
1 1/2 cups sugar
2 eggs
1 cup oil
1 tsp lemon extract (optional, which I used)
3 cups flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
zest of 1 lemon
2 cups blueberries (I only used 1 1/2 cups)

Beat zucchini, sugar, eggs, oil, and lemon extract. Sift together dry ingredients and stir in with lemon zest. Fold in the blueberries gently. Pour into a well greased and floured Bundt cake pan. Bake at 325 for about 65 minutes or till toothpick comes out clean. Let sit in pan for 5-10 minutes, then invert onto cooling rack. Cool completely and frost with lemon cream cheese frosting.

Lemon Cream Cheese Frosting

3 Tbsp soft butter
3 oz soft cream cheese
2 cups powdered sugar
dash salt
zest of 1 lemon (2-3 tsp)
2 Tbsp fresh lemon juice (approximately)

Beat butter and cream cheese till smooth. Add powdered sugar, salt, zest, and enough lemon juice to make a spreadable consistency.

Cocoa Cola Cake~

This is really good and I am not a Coke fan?? Made it last night and took a sip of the left over coke and thought, how can this cake be so good with Coke in it! haha



Cocoa Cola Cake



2 cups flour

2 cups sugar

1/2 cup butter

1/2 cup oil

3 TBSP. Cocoa

1 cup coke (not diet)

1 tsp soda in 3/4 cup buttermilk

2 eggs

1 tsp vanilla

1 1/2 cup mini marshmellows



In large bowl mix flour and sugar. In saucepan mix butter, oil, cocoa, and Coke. Bring to boil and pour over dry mixture, then add soda in buttermilk, eggs, vanilla. Mix well. Stir in marshmellows. Pour into greased 9 x 13 pan. Bake at 350 degrees for 40-45 minutes. Frost while warm.



Cocoa Cola Frosting

1/2 cup butter

3 TBSP. cocoa

6 TBSP. Coke

1 tsp vanilla

1 cup chopped pecans

Powdered Sugar



Mix butter, cocoa, and coke in a sauce pan. Bring to boil. Remove from heat. Add vanilla, nuts, and powdered sugar to thicken. Mix well and spread on hot cake!

Cream Cheese Sheet Cake~

Delicious..........if you don't share you will eat the whole thing. I am not joking! :)





Cream Cheese Sheet Cake~





1 cup plus 2 tablespoons butter or margarine, softened


6 ounces cream cheese, softened


2 1/4 cups sugar


6 eggs


3/4 teaspoon vanilla extract


2 1/4 cups flour





Frosting~


1 cup sugar


1/3 cup evaporated milk


1/2 cup butter or margarine


1/2 cup chocolate chips (I used milk chocolate, but you could use semisweet.)





In a mixing bowl, cream butter, cream cheese, and sugar. Add eggs one at a time, beating well after each addition. Beat in vanilla. Add flour; mix well. Pour into a greased cookie sheet. (15x10x1 in) Bake at 325 degrees fro 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool completely. For frosting, combine sugar and milk in a saucepan; bring to a boil over medium heat. Cover and cook for three minutes(do not stir). Stir in butter and chocolate chips until melted. Cool slightly. Stir; spread over cake. Yield 24-30 serings.

Double Chocolate Banana Bread :)

Double Chocolate Banana Bread

I was looking all morning for a chocolate bread recipe! I found one the other night on a blog and couldn't find it again this morning! :( I was sad, but then I found this one at www.sistercafe.blogspot.com so I decided to give it a try! THIS IS VERY CHOCOLATEY(is that even a word?); I like dark-rich chocolate, but I am not convinced that Spencer liked it? Next time I may use Milk Chocolate chips and a little less cocoa? I will have to experiment with it!


1 cup sugar
2 eggs
1/3 cup vegetable oil
1 1/4 cups mashed bananas (about 3)
1 tsp vanilla extract
1 1/2 cups flour
1/2 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup semi sweet chocolate chips

1. Heat oven to 350. Spray bottom of 8x4 inch loaf pan with cooking spray.

2. Beat sugar, eggs, and oil in large bowl at medium speed until combined. Beat in banana and vanilla at low speed. Combine flour, cocoa, baking soda and salt in a medium bowl; beat into banana mixture at low speed just until combined. Stir in chocolate chips.

3 Spoon batter into pan. Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan; cool completely on wire rack.

Chocolate Bundt Cake!


I made this cake to enjoy while I waited and am still waiting to bake my bread!!!! It's taking forever to rise today/tonight!!! This cake was way yummy, but it's alot of chocolate! Spencer said I should of used cream cheese frosting; he doesn't like too much chocolate!! Maybe next time! I did take a picture, but it doesn't make it look very good! I used all the frosting because it was so good, but it would be prettier with less frosting???
I found this recipe on The Sister's Cafe, but did make a few changes! :)
Super Moist Chocolate Bundt Cake
1 devils food cake mix (Dry--don't make it according to directions on the box) I USED CHOCOLATE FUDGE because I didn't have devils food; either work!
1 -4 serving instant chocolate pudding mix ~ I USED CHOCOLATE FUDGE - either work!
4 large eggs
1 cup sour cream
½ cup warm water
½ cup vegetable oil
1 ½ cups semi sweet chocolate chips; milk chocolate work great as well!
Place all ingredients except chocolate chips, in a large mixing bowl. Blend with electric mixer 1 minute. Stir down sides. Continue to mix on medium speed for 2-3 minutes. Stir in chocolate chips. Pour batter into prepared bundt pan.Bake 45-50 minutes at 350. Cool 20 minutes. Invert onto serving platter.
Frosting:
8 Tbsp butter (not margarine)
4 Tbsp cocoa powder
1/3 cup evaporated milk (I used 1%-it worked great)
4 cups sifted powdered sugar
Melt butter in medium saucepan over low heat. Whisk in cocoa and milk. Bring mixture just to boil, stirring constantly. Remove from heat. Beat in powdered sugar with electric mixer until thickened and smooth. Pour warm frosting over warm cake. This recipe makes a lot of frosting, as you can tell from my picture! ;)

Pineapple Cake

Pineapple Cake

1 1/2 cup sugar
2 cups flour
2 cups crushed pineapple and juice
1 tsp vanilla
1 egg and 1 egg white (save yolk for topping)
2 tsp. soda
Mix well and pour into greased 9 x 13 pan. Bake at 30-40 minutes at 350 degrees.

Toppings: (start 10 minutes before cake is done)

6 TBSP. margarine
2/3 cup sugar
3/4 cup evaporated milk
1 egg yolk
Mix and boil for 6 minutes over medium heat, stirring constantly. Cool cake for 5 minutes, then pour topping over warm cake.

Chocolate Chip Oatmeal Cake

Chocolate Chip Oatmeal Cake

1 3/4 cup boiling water
1 cup oatmeal
1/2 cup butter
1 cup brown sugar
1 cup sugar
2 eggs
2 cups flour
1 tsp. soda
1/2 tsp. salt
2 TBSP. cocoa
1 cup chocolate chips (save 1/4 cup for the top)
1/2 cup nuts (optional)

Preheat oven to 350 degrees. Pour boiling water over oats and butter in mixing bowl and let stand for 10 minutes.
Add sugars and eggs and mix until well blended.
Add remaining ingredients (reserving 1/4 cups chocolate chips) and mix well.
Pour batter into 9 x 13 pan and sprinkle reserved chocolate chips on top.
Bake at 350 degrees for 30 minutes or until center is done. (Use toothpick to test.)

This cake is heaven on earth when served with vanilla ice cream! :)

Best Ever Chocolate Cake!

Best-Ever Chocolate Cake

3 cups all purpose
2 cups sugar
6 TBSP. baking cocoa
2 tsp. baking soda
1 tsp. salt
2 cups water
2/3 cup vegetable oil
2 tsp. white vinegar
2 tsp. vanilla

In mixing bowl, combine the first five ingredients. Add the water, oil, vinegar, and vanilla. Beat on low speed for 1 minutes. Beat on medium for 1 minute. Pour into a greased 13 x9 pan. Bake at 350 degrees for 40-45 minutes or until toothpick inserted near the center comes out clean. Cool on wire rack.

Frosting:
1 cup cold milk
1 pkg. (3.0 oz) instant chocolate pudding mix
1 carton (8 oz) frozen, whipped topping, thawed
For frosting, in a mixing bowl, beat the milk, and pudding mix for 2 minutes. Beat in whipped topping. Spread over cake. Refrigerate leftovers!

Coconut Bread

Coconut Bread

4 eggs
2 cups sugar
1 cup oil
2 tsp. coconut flavoring
3 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1 cup coconut

Combine eggs, sugar, oil, and flavoring and mix well. Add dry ingredients, mixing well as you add the buttermilk slowly. Stir in the coconut. Makes 2 loaves or 1 bundt pan. Grease and flour pan of choice very well. Bake at 325 degrees for about 1 hour and 15 minutes or until done when tested and golden brown.

Glaze:
Combine 1 cup sugar, 1/2 cup water, and 2 TBSP. butter. Boil for 5 minutes and then add 1 tsp. coconut flavoring. Pour syrup over hot bread.

A really yummy treat!

2 1/4 cups sugar

1/2 cup semisweet chocolate chips

Easy Scarecrow Cake!

This was so fun for the girls! They loved it! :) I found this idea and recipe on Betty Crocker.com.

1 box Betty Crocker® SuperMoist® cake mix (any flavor)
Water, vegetable oil and eggs called for on cake mix box

1 container (1 lb) Betty Crocker® Rich & Creamy vanilla frosting

1 box (4 oz) waffle ice cream bowls (10 bowls)
1 box (4.5 oz) Betty Crocker® Fruit by the Foot® chewy fruit snack rolls (6 rolls)

1. Heat oven to 350°F (or 325°F for dark or nonstick pan.) Grease 12-cup fluted tube (bundt cake) pan with shortening and lightly flour, or spray with baking spray with flour. Make cake mix as directed on box, using water, oil and eggs. Pour into pan.

2. Bake 40 to 45 minutes or until toothpick inserted in the center comes out clean. Cool 15 minutes; remove from pan to cooling rack. Cool completely, about 1 hour 30 minutes.

3. Place cake on serving plate. Reserve 1/4 cup of the frosting. Spread remaining frosting over cake. For straw hat, place 1 waffle bowl upside down in center of cake. Stack 5 more bowls on first bowl.

4. For hair, cut fruit snack into 14 (6-inch) strips and 14 (5-inch) strips. Cut each strip lengthwise to within 1 inch of top of strip. Place one 6-inch and 5-inch strip together, pressing together at uncut ends. Repeat with remaining strips. Randomly press pairs of strips on top of two-thirds of cake, overlapping as needed and allowing strips to hang over side of cake. Spread reserved 1/4 cup frosting over top of hair.

5. For brim of hat, break remaining waffle bowls into 5 or 6 pieces each. Randomly press waffle pieces on top of cake, overlapping and tucking pieces as needed. Allow waffle pieces to hang over side of cake and over fruit snack strips. Cut pieces of remaining fruit snack for eyes and nose; press on cake. I used Choc. Chips because Spencer and Maycie at all my Fruit By the Foot!!!
High Altitude (3500-6500 ft): No change.
